We grow our fresh herbs, beets, peppers, radishes, berries, eggplants, microgreens, tomatoes, seasonal varieties, edible decorations and contract the rest of our menu with local farms. Most farms use seeds for maximum harvest and pick early, our focus is flavorful heritage seeds while picking fresh. We grow most of our menu (or contract to partner farms) using only heritage seeds and allowing us to pick fresh.
Most menus are assembled from mass produced ingredients created for shelf life and profit - ask what did they make? Handcrafting focuses on flavor and freshness, by not worrying about shelf life, we use more spices, aging, fermenting, smoking and fresh grinding all of our heritage grains.
