Patrick Giles is the sushi chef of choice for all Grand Del Mar and Crosby Estate in Rancho Santa Fe events. He was born and raised in San Diego, and went to work on the sportfishing boats of Seaforth Sportfishing at the early age of 15. After nine years of fishing experience he began training as a sushi chef under many of San Diego's best culinary artists, among them Big Mike of Hana Sushi, Kevin Saito of Station Sushi and Toshi San of Sushi Ota.

Patrick also worked as head sushi chef for MARKET Restaurant and Bar, where he learned. Fresh Sushi Catering always cooks on location. We like to think of ourselves as personal chefs, not caterers. All fish is transported on ice directly from the distributors to your residence or venue of choice, and prepared fresh on the spot. Eat, entertain and learn with an Interactive Sushi Party.

We like to think of ourselves as personal chefs rather than caterers.
That's why we always prepare everything on-site at your residence or venue of choice.
We want you and your guests to be involved in the creative act, to experience the art of sushi from beginning to end.
All sushi rolls are cut bar-style into 8 pieces, and ponzu, garlic ponzu, spicy aioli, Chili sauce, and eel sauce are always provided.
Please let us know if you have any special requests - we can do it all.
