Upon completion of his five-year apprenticeship in 1978, Michael then obtained his formal education and degree from The Culinary Institute of America in Hyde Park, New York.
Michael spent the next seven years opening noted restaurants in New York City.
Such as "Pesca" on East 22nd St. "Liberty Cafe" in the South Street Seaport and "Cavagnaughs" on 41st and Broadway.
In 1988 Michael relocated to Florida to work under Chefs Jean Mergen and Louis Outhier to bring haute cuisine to the Top of the Tower at the Boca Raton Resort & Club.
