Upon his arrival in Los Angeles in 1993, Pascual began working in various restaurants, beginning as a soup cook, spent several years as a line cook before becoming Sous Chef at LA's trendy French Marketplace. He first was exposed to vegetarian and vegan cooking while studying Mediterranean Cuisine and was soon preparing vegan fusion specials at Sage Vegan Bistro in Echo Park.

Over six years, he created the Sage's original brunch menu and several favorites including their innovative vegan chilaquiles entree and their famed Reuben Sandwich. Pascual Vegan Catering provides gourmet, plant-based vegan and vegetarian menus tailored to your specific special event. Organic, gluten-free and oil-free options are also offered.
