Growing up in New Orleans, Nelson discovered the value of great food being the centerpiece of any event. From small intimate gatherings with old friends to big events with hundreds of people, the food matters. Encouraged and supported by a couple close friends, Nelson founded Cajun Catering, LLC in 2015 to marry his love of cooking incredible food with his enjoyment of helping others put on great events.

Nelson and his wife, Kate, have been involved in triathlon and are active with local DC triathlon team, Team Z. Kate is usually racing while Nelson cooks for the athletes and families. Kate and Nelson are also very active in the fight against multiple sclerosis (MS) since Kate was diagnosed with MS in 2004. They believe that an active lifestyle and physical conditioning are key to living well with MS.

With its visually impressive preparation and service, crawfish boils are anything but typical.
Crawfish boils include crawfish, sausage, baby red potatoes, corn, onions, garlic, and spices.
You may also want to add pineapple, mushrooms, hot dogs, artichokes, or Brussels sprouts.
Once cooked, the all-in-one pot is drained and poured out onto a table for hungry appetites to feast upon.
Low County Boils or "Frogmore Stew" as it is known in some areas of the Carolinas is a great way to enjoy a boil (almost) year round.
